EASY Flourless (gluten free) Plantain Pancakes

Ingredients:

1 green (or ripe) Plantain (or banana) I use a green plantain because I don’t like bananas and it has a more subtle flavor           (I have also used a couple scoops of protein powder in place of the plantain)

2 eggs

spices: cinnamon, ginger, nutmeg if desired

Directions:

Blend all ingredients together (I use a magic bullet), fry in cast iron pan with organic cold pressed coconut oil or organic grass-fed butter (or ghee). Serve with berries if desired.

GluTen-Free Low-carb Spaghetti

Ingredients:

1 spaghetti squash

1 bottle Sugar free sauce- I like Marinara

1 pound grass-fed organic ground beef (can alternate ground chicken or turkey)

1 medium onion

2-4 cloves of garlic (depending on your liking)

1/2 can of diced tomatoes (check the can for no sugar)

Grated cheese of your liking to top

Directions for cooking squash:

  1. To prepare the spaghetti squash, preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.

  2. Use a very sharp chef’s knife to cut off the tip-top and very bottom ends of the spaghetti squash. Stand the squash upright on a stable surface and carefully slice through it from top to bottom to divide it in half.

  3. Use a large spoon to scoop out the spaghetti squash seeds and discard them. Drizzle the insides of each squash half with 1 teaspoon olive oil and rub it all over the inside, adding more oil if necessary. Sprinkle sea salt and pepper lightly over the interiors of the squash, then place them cut-side down on the prepared baking sheet. Pierce outside of squash a few time with a knife.

  4. Bake for 40 to 60 minutes, until the cut sides are turning golden and the interiors are easily pierced through with a fork. Small squash will be done sooner than large squash, naturally!

  5. Flip squash over and broil for 3-4 min. until a little brown starts to appear on meat of squash. Remove from oven.

  6. Once the squash is done baking, fluff the interiors with a fork to make the insides spaghetti-like.

~Sauce:

Cook ground beef until brown. Simmer with diced onion, garlic, sauce and tomatoes with desired Italian spices (oregano, basil, parsley…) until desired heat and flavour.

Scoop spaghetti squash on plate, top with sauce and grated cheese.

Enjoy with any type of vegetables as a side or a large greens salad.
