Cauliflower Pizza

TOTAL TIME: 35 mins

Ingredients:

2 cups finely grated organic cauliflower

2 cups grated organic mozzarella cheese plus extra for topping

2 large organic eggs

Organic tomato sauce or pizza sauce

1 teaspoon garlic powder

1 teaspoon Italian herbs

Toppings of your choice

Directions:

  1. Pre-heat oven to 450 degrees. Cut parchment paper to match the size and shape of your pizza pan. Parchment paper is the best way to prevent your crust from sticking to the baking surface.

  2. Finely grate cauliflower and remove any large chunks. You want a fine, texture like rice. Try to spread it as thin as possible. (Can use cauliflower ricer)

  3. Mix together the cauliflower, 2 cups organic mozzarella cheese, and two eggs until well-combined. Add 1 teaspoon of Italian herbs and garlic powder. Mix well.

  4. Place cauliflower mixture in the center of the parchment paper on the pizza pan. Spread the mixture thinly but evenly out the edges of the pan.

  5. Bake crust at 450 degrees for 15 minutes.

  6. Once the crust is cooked. Place a small dollop of tomato pizza sauce - start with less than you think you’ll need- in the center of your crust and spread it out nearly to the edge. Be conservative with the sauce- the less sauce the better it tastes and cooks up.

  7. Add remaining toppings, with just a little bit of cheese, as you already have lots in the crust. I like to add goat cheese or feta, rather than more hard cheese.

  8. Return to oven and re-bake until cheese is evenly melted and just beginning to turn golden on the surface. This will usually be between 10-15 minutes.


Sauerkraut-

What you need:

Mason jar, organic cabbage, filtered water, pink Himalayan salt, patience

Directions:

Slice up an organic cabbage, pack as much cabbage into the jar as you possibly can. Fill the jar with filtered water to cover the cabbage. Add one teaspoon of pink Himalayan salt. Put the lid on, shake the jar, open it and see if you can pack any more cabbage in. Make sure all cabbage is covered by water. Put the lid on and leave on your counter for 5-7 days. Open the lid slowly daily to release the gases. Enjoy!

Feel free to mix it up, add grated carrots, garlic, onion, etc.

Fermented Veggies-

You can use any kind of organic vegetables and herbs!

My favorite combos- green beans, garlic and dill    Can swop up green beans for cucumber, or asparagus. YUM!

carrots, ginger, garlic and parsley

sweet peppers (or hot, if you like), basil and garlic

cauliflower, garlic/onion, curry powder

Cut up organic veggies in sticks or how you desire, pack as much into the jar as you possibly can. Fill the jar with filtered water to cover the veggies. Add one teaspoon of pink Himalayan salt. Put the lid on, shake the jar, open it and see if you can pack any more veggies in. Make sure all veggies are covered by water. Put the lid on and leave on your counter for 5-7 days. Open the lid slowly daily to release the gases.

Enjoy on the homemade cauliflower pizza, or just enjoy a few with each meal, changing them up with each meal to have different colours for different healthy bacteria to feed your gut microbiome.
